Known for its floral and herbal characteristics, this hop brings a delightfully delicate aroma, refreshing noble spiciness and is balanced by a restrained bitterness and clean finish, characteristic of Braybrooke lagers.
Tardif de Bourgogne is a heritage French hop which fell victim to the consolidation of French hop farms in Alsace in the 20th Century and hence by the 1960s Tardif de Bourgogne, or ‘Late Burgundy’, had effectively disappeared from commercial cultivation. That was until Locher Hopfen revived the variety as part of their heritage restoration project to make this magnificent hop available once more for the brewers at Braybrooke.
